Rajendra Karki is a renowned chef that is a friend of ours. He has received accolades from cooking competitions all over Asia including prestigious competitions in Singapore, Thailand and Malaysia. We partnered with him to come up with a energy pastry that is a mix between a cookie and a scone and decided to call it a Scookie. It uses Goji berries, a powerful antioxidant and Stevia which is light years stronger than sugar yet carries virtually no sugar. Hope you like it. Send us your thoughts and pictures please.
Scookie – Park Cookie, Part Scone.

Ingredients
- 3/4 cup softened butter
- 1/4 teaspoon stevia
- 3/4 cup brown sugar packed
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/4 quinoa flower
- 1 teaspoon baking soda
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 2 3/4 cups rolled oats
- 1/2 cup cranberries
- 1/2 cup goji berries
- 1/2 cup walnuts
Method:
- Shift together baking soda, cinnamon, quinoa and salt
- Use a beater one medium speed for about a minute to combine butter and brown sugar
- Add eggs and vanilla to the butter and brown sugar mix and mix for about another minute.
- Add Stevia and continue mixing for about 30 seconds.
- Add in the baking soda, cinnamon, quinoa and salt mix
- Use a spatula to mix in oats and cranberries, goji berries and walnuts
Bake for about 12 minutes. If you would like a darker and less soft Scookie, bake for 15 minutes.
